Baking Basics: Measuring Ingredients the Right Way
Why a kitchen scale beats measuring cups, and other fundamentals every home baker should know.
Long before our doors open, our kitchen is already alive with the smell of fresh bread and the quiet hum of ovens warming up. Here is a look at what a typical day looks like behind the scenes.
Our bakers arrive while the city is still asleep to start the dough that needs the longest proofing time. Bread and croissant dough is mixed first, since a slow, cool rise is what gives them their flavor and texture.
Once the bread is in the oven, attention turns to cakes, pastries, and custom orders for the day. Every custom cake is checked against its order sheet twice — once when the base layers come out, and again before it goes out for decoration — to make sure details like flavor and size match exactly what the customer asked for.
As the display cases fill up, the team is already prepping ingredients for the next day — measuring, mixing pre-doughs, and cleaning workstations so the next shift can start fresh.
It takes a lot of early mornings and careful hands to get a simple loaf of bread or a slice of cake to your table. We would not have it any other way.
